The Chippewa Valley Museum
My first trip of an ESL course was Chippewa Valley Museum. Although it may be pretty long ago, I still think that it's still fresh in my mind.
I have learned a lot especially from an old man who is always willing to share information of every thing he knows. I will never forget him and the Chippewa Valley Museum...

Lao Chicken Soup ( Kheang Khai)
INGREDIENTS:
· 3 cups water
· 1 teaspoon salt
· 3 cups of chicken stock
· ½ cup finely sliced spring onions
· 1 chicken breast thinly sliced (optional)
· 1 stalk lemon grass (optional)
· 1 green chilli sliced thinly (optional)
· 1 tablespoon of crushed garlic (optional)
· 1/3 cup finely chopped coriander (optional)
· dash of cooking oil (optional)
· 2 tablespoon fish sauce (optional)
· ¼ cup finely sliced mint leaves (optional)
· Juice of 1 lime (optional)
DIRECTIONS:
· Boil the water in a saucepan about 2 minutes.
· Then add chicken and follow by salt.
· Wait until it reaches maximum heat.
· After that, put the onion and stir them.
· Wait 3 more minutes.
· And then it is ready to serve with a bowl of sticky rice (optional).

· Boil the water in a saucepan and add the salt and chicken stock.
· Once boiling add the chicken breast meat and reduce the heat to a simmer.
· Simmer for about 5 minutes then remove the chicken from the stock and set aside.
· In a frypan add a dash of oil and when boiling add the garlic, chill and lemon grass.
· Once brown remove from the heat and cool before crushing in a mortar until a fine paste.
· Add the paste to the saucepan and remove the saucepan from the heat.
· Shred the chicken into thin strips and return to the soup.
· Stir in the chopped coriander, mint, lime juice and fish sauce.
· Serve with a bowl of sticky rice. (optional)
“For the Chicken Soup, I believe that there are differences in many places. And this menu is made in Laos. It is unique. And it has been one of Lao most favorite foods for many century. If you have a chance, try to cook this menu. It is very easy and delicious. I am proud of Lao food.”

Hmong People
Last class on July 21, we studied about Hmong in Wisconsin. It was very interesting because I am Lao.
In Wisconsin, Hmong people were originally from Asia especially Laos, Thailand, and so on. They have their on language, own tradition, and own religion. In the past they lived in the mountains. But then some of them immigranted to the United States to find a better life. However many still live in their home town, in Laos.
In my country Laos, Hmong people are one of the big part of the major population.
And many of them are in charge of the high positions in Lao government. So I can say that there is no discrimination between any ethnic groups in Laos nowadays.

Minneapolis Institute of Arts, the Largest Museum I Have Ever Seen
Arts Museum in Minneapolis is very important to me. I have seen many things that I have learned in Fine Arts subject when I was in Laos. It was an unexplainable feeling. If I have a chance, I want to be there again. I feel that it is so big and I walked just 1/10 of its area.
I like this museum. It has a plenty of collections.
Memorable Excursion to Minneapolis, Minnesota, USA
I feel that the Mall of America is enless. I walked alone 3 hours, " getting lost with Eng Hwa, one of my international friends". It was a very good time in the mall. I personally like shopping but unfortunately I was almost broke. Anyway, it was such a memorable experience to walk alone in the Mall of America. :)
